It’s 2021!!! Goodness gracious, it is 2021. A whole new year has begun. I am one of those people where a new year brings about new energy for me and I for one am all for it. I am all about what a new year symbolizes. There is a certain feeling of starting over, new goals, new endeavors. A feeling of new. And especially after 2020, a new year is much needed.

I am glad to go into 2021 and work on some things I lost track of last year. One of those being: eating well. I know eating well is a broad term but for me eating well means eating what my body needs which includes nutrition and fuel. I believe in moderation, however in 2020 moderation had a whole new meaning. Aka, moderation did not exist. I was emotionally eating … all the time.

I hope to change some of those habits I developed last year – albeit habits that helped me to cope.
I started this year off with meal prepping. This chickpea feta salad was part of my meal prep. It is easy as 1,2,3 to make, tastes delicious and is nutritious. If you are part of Weight Watchers this is a 2 point salad (assuming you separate this into 3 servings). The entire recipe is 6 points (on the blue plan).
Chickpea & Feta Salad
Ingredients
- 2 15 oz cans chickpeas drained and rinsed
- 1 3.8 oz can black olives drained and rinsed
- 1/2 cup feta cheese Mediterranean blend
- 1/2 red onion diced
- 1/2 red bell pepper diced
- 1/4 cup green onions
- 1/2 english cucumber diced
- 1 small tomato diced
- 3 garlic cloves minced
- 1 tsp parsley dried
- 1/2 tsp oregano dried
- salt and pepper to taste
- 1/2 tsp red pepper flake optional for added spice
- 1 lemon for zest and juice
Instructions

In a large bowl, combine all ingredients except for the spices. Combine and mix together.

Next add in all the spices (minced garlic, parsley, oregano, salt, pepper). Mix well.

Gently squeeze half a lemon onto the salad and slightly zest the lemon onto the salad. Depending on preference you can squeeze as much as you want onto the salad. I prefer a slight lemon taste, so I only used a little bit of the lemon for the juice.

Mix well and enjoy!
