One pastry, I crave so often is a Cheese Danish. I just love the flakiness of the pastry with the sweet tang of cream cheese. And if you are like me and also love a good Cheese Danish, you will love this easy recipe!

This recipe uses Eggland’s Best Eggs and puff pastry sheets to make an easy and quick version of a classic breakfast staple.

Feel free to top with fresh fruit of choice and then bake the pastries. I like to use fresh strawberries, but you can substitute fresh blueberries, blackberries or raspberries. Also, I highly recommend doing an icing sugar drizzle on top once the pastries have cooled down. It’s simply divine!

For me this is a great meal prep for a on the go breakfast. I can quickly grab a Cheese Danish and be on the go. And did I mention quite inexpensive compared to buying one at your favorite coffee shop/pastry shop.

Cheese Danish

Prep Time 20 minutes
Servings 12 Danishes

Ingredients

  • 1/2 cup strawberries + 2 tablespoons sugar rinsed and drained, diced or sliced accordingly to preference
  • 1 egg + splash of water for the egg wash
  • 1 8 oz cream cheese softened
  • 3 ½ tbsps sugar
  • 1 tsp vanilla extract
  • ½ tsp lemon juice
  • 1 egg yolk
  • 1 17.3 oz Puff Pastry Sheets Package thawed

Optional:

  • Dust with powdered sugar and a drizzle of icing

Instructions

  1. Preheat oven to 400F and line two large baking sheets with parchment paper
  2. Wash and rinse strawberries. Slice or dice according to preference. Coat with two tablespoons of sugar, mix together and set aside.
  3. In a small bowl, whisk together one egg with a splash of water. This will be your egg wash. Set aside.
  4. In a large bowl, beat cream cheese, 3 ½ tablespoons of sugar, vanilla extract and lemon juice together. Make sure to use room temperature cream cheese. At this point you can perform a taste test, to make sure the sweetness of the mixture is according to preference. Once taste is according to preference, add in egg yolk and mix until all ingredients are incorporated. Set aside.
  5. Unfold puff pastry sheets. With a rolling pin, lightly roll out the pastry sheet. Roll both length wise and width wise. With a pizza cutter, slice the puff pastry in half from the middle (lengthwise). Then slice each half into 3 rectangles, width wise. This will leave you with 6 rectangles. Repeat same process for the second puff pastry sheet. Giving you a total of 12 rectangles.
  6. Transfer each Danish onto a baking sheet, making sure they are evenly spaced out. Use a knife to score a ¼ to ½ inch border around the outside. Make sure not to cut all the way through, just lightly score. Using a fork, lightly press into the inner rectangle you just scored.
  7. Lightly brush the edges with the egg wash
  8. Take a spoonful of the cream cheese mixture and place it into the center of each Danish. Using a knife spread it around so the entire area has the mixture (making sure to stay inside the scored area). Next add the strawberries in the middle of the cream cheese mixture. Optional: sprinkle some sugar on top and around the edges of the Danish.
  9. Bake for 10-12 minutes or until puffed and edges are brown. (depending on your oven, it may take a little longer, so keep an eye out after 10 minutes)
