Chickpea & Feta Salad

Ingredients

  • 2 15 oz cans chickpeas drained and rinsed
  • 1 3.8 oz can black olives drained and rinsed
  • 1/2 cup feta cheese Mediterranean blend
  • 1/2 red onion diced
  • 1/2 red bell pepper diced
  • 1/4 cup green onions
  • 1/2 english cucumber diced
  • 1 small tomato diced
  • 3 garlic cloves minced
  • 1 tsp parsley dried
  • 1/2 tsp oregano dried
  • salt and pepper to taste
  • 1/2 tsp red pepper flake optional for added spice
  • 1 lemon for zest and juice

Instructions

  1. In a large bowl, combine all ingredients except for the spices. Combine and mix together.
  2. Next add in all the spices (minced garlic, parsley, oregano, salt, pepper). Mix well.
  3. Gently squeeze half a lemon onto the salad and slightly zest the lemon onto the salad. Depending on preference you can squeeze as much as you want onto the salad. I prefer a slight lemon taste, so I only used a little bit of the lemon for the juice.
  4. Mix well and enjoy!
