“Note to self: Do not measure your progress using someone else’s ruler.”

Boy did I need to hear that today. Isn’t it interesting, how progress works? Some days, weeks, even months, you can’t tell you are pushing forward and then all of the sudden you see it. You can feel it. You can see all the strides you have made and how far you have come. Then there are days where it’s a conscious decision you make to acknowledge the progress, instead of focusing on all there is left to do.

Just because progress is slow, it does not mean there is no progress.
This is a reminder to you all, to those of you that feel stuck, to those of you that feel like progress is not happening for you. Remember just because it feels slow, does not mean it is not happening. Hang in there.

This is one of the first recipes I published and then later went back and deleted. But today – as I think about progress, I thought this would be the perfect post. Progress from then to now.

Two things: this cannoli dip is a lightened up version BUT it is still DELICIOUS! Secondly, this is the perfect dip for a halloweeny treat! Fill some waffle cones with this dip, right before serving. Tip: use a plastic sand-which bag to pipe the dip into the cones. Remember to do it right before serving, as the cones will get soggy if you do it too soon. Another tip and preference of mine is to serve the cones alongside the dip. People can fill the cones as they like.

Skinny Cannoli Dip
Ingredients
- 1 container of part skim ricotta cheese 15 oz, drained of liquid
- 1/3 container of COOL WHIP topping thawed
- 1/3 cup of powdered confectioners’ sugar
- ½ teaspoon of pure vanilla extract
- ½ cup of mini chocolate chips or as desired
Instructions

Combine Ricotta, cool whip, powdered sugar and vanilla extract in a medium bowl. Be careful to not overmix. Fold the mixture about 10-15x.

Fold in mini chocolate chips.

Refrigerate or serve immediately!
Recipe Notes
Make sure to drain the ricotta of liquid, you can do this with a cheese cloth, or just plain paper napkins. If you have a little extra time, drain overnight.
If you plan on piping this dip into waffle cones, refrigerate for an hour, so the mixture firms up, and is easier to pipe. Remember to pipe right before serving, because cones will get soggy.
You can serve this dip with pieces of waffles cones, fruits, cookies or just eat it by the spoonful!
