Skinny Cannoli Dip

Smooth & creamy, light & sweet

Ingredients

  • 1 container of part skim ricotta cheese 15 oz, drained of liquid
  • 1/3 container of COOL WHIP topping thawed
  • 1/3 cup of powdered confectioners’ sugar
  • ½ teaspoon of pure vanilla extract
  • ½ cup of mini chocolate chips or as desired

Instructions

  1. Combine Ricotta, cool whip, powdered sugar and vanilla extract in a medium bowl. Be careful to not overmix. Fold the mixture about 10-15x.
  2. Fold in mini chocolate chips.
  3. Refrigerate or serve immediately!

Recipe Notes

Make sure to drain the ricotta of liquid, you can do this with a cheese cloth, or just plain paper napkins. If you have a little extra time, drain overnight.

If you plan on piping this dip into waffle cones, refrigerate for an hour, so the mixture firms up, and is easier to pipe. Remember to pipe right before serving, because cones will get soggy. 

You can serve this dip with pieces of waffles cones, fruits, cookies or just eat it by the spoonful!
