Make sure to drain the ricotta of liquid, you can do this with a cheese cloth, or just plain paper napkins. If you have a little extra time, drain overnight.
If you plan on piping this dip into waffle cones, refrigerate for an hour, so the mixture firms up, and is easier to pipe. Remember to pipe right before serving, because cones will get soggy.
You can serve this dip with pieces of waffles cones, fruits, cookies or just eat it by the spoonful!
