Spicy Garlic Parmesan Zoodles

It was 9pm Sunday night, and that “ugh…I have work tomorrow” feeling started to sink in. I had a fridge full of fresh groceries, but zero energy to get up off my couch and meal prep. So what did I do? I got my a$$ up and meal prepped the sh$% out of Sunday!

Goal was to have lunch prepped and various snacks packed. Check! I even went as far to blend myself a smoothie for the next morning! Check! Boy did I feel accomplished! I was ready to take on the week. That was until my alarm rang Monday morning, and I snoozed for an hour. But, whatever, tomato…..toe mato.

Personally I have learned the first step in eating well is to be prepared. If I have the necessary ingredients on hand, and the right foods cooked and prepared…I will be less likely to eat things I feel guilty about during the week. Normally, Sundays are the days for that. Which is exactly what I did last night. I will also be sharing some of my go to smoothie recipes with you guys..so stay tuned!

Anyways…I must say…this is one of the quickest & easiest meal prep recipes ever…like ever ever!!! An extra bonus on top of quick and easy is that they taste just as good the next day!  Simply pop into the microwave for 60-90 seconds. A perfect meal prep option for those of you on the go, or a dinner option for a low carb dinner! Whatever suits your style, I think this recipe will work for you!

PS. I recommend serving these zoodles along side the bistro buns from Brooklyn Bred. These little buns are 100 calories, and satisfy that bread craving. See notes below in the recipe box!

Spicy Garlic Parmesan Zoodles

Crisp, crunchy, spicy, buttery, garlicky
Prep Time 5 minutes
Cook Time 15 minutes
Total Time 20 minutes
Servings 1 person

Ingredients

  • 1 tbsp butter
  • 1 tbsp minced garlic if using fresh: 3-4 garlic gloves
  • 1 small jalapeno pepper, seeded and cut into round rings use half for less spice
  • 2 tbsps water
  • 1 tsp oregano
  • 1/2 tsp smoked paprika
  • 1 tsp red pepper flakes
  • 1 tsp siracha sauce
  • Sea salt & cracked black pepper to liking
  • 1 16 oz package of spiralized Zucchini if spiralizing use: 3-4 small to medium sized Zucchinis
  • ½ cup grated parmesan cheese
  • 1/2 tbsp olive oil

Instructions

  1. Heat butter in a pan over medium heat-high heat. Add garlic and jalapeños and sauté for ~1 min.

  2. Reduce heat to medium and add in water, oregano, paprika, red pepper flakes, siracha sauce, salt and pepper. Let simmer for ~ 1-2 mins.
  3. Add in zoodles and mix in olive oil. Stir & toss constantly. Taste test to see which spices you want to add more of if any and toss. Cook zoodles for 10 mins, or until desired texture. 

  4. Serve while hot and top with Parmesan cheese and drizzle with olive oil. 

Recipe Notes

  • I recommend serving these zoodles with Brooklyn Bred Bistro Buns. Spread 1 tsp of butter on the buns, and pan fry until desired crisp, about 2-3 minutes. Top with parmesan cheese and serve alongside the zoodles. The best part?? One serving of these buns....is...100 calories!!
  • I happened to stumble upon the buns at Whole Foods. But other grocery chains such as Shoprite & Kings Food Markets stock this brand as well. Here's a link to their website
  • If you can't find, substitute with your favorite bread! Can't go wrong with this recipe. 🙂
