Every so often, we all need a reminder that: things take time. It is okay to slow down, breathe in the moment and just simply relax. Enjoy yourself, bask in this very moment with whatever you are doing or working on. That thing you are waiting on, that thing that you are working on, whatever that thing is that you are hoping happens, just a reminder …. sometimes it just takes some time!

This is one of those mish mosh dishes, that came together nicely! I made this salad after a late night work out. You know that moment where you get inside your home and you are famished. You’re soaking in sweat, half tired, half full of adrenaline and absolutely ravenous after a high intensity work out. I had a bag of shredded lettuce in the fridge, some left over pico de Gallo that I had made the night before, some mozzarella cheese pearls and of course some avocados!

Needless to say, my hunger was the driving force that day. And boy am I glad. This has become a go to salad! I made it once for my parents and now they ask for it daily! So it is most definitely parent approved! Oh and it is picky kids approved too. My little cousin tried a bite of this and instantly ate it up!

BBQ Taco Salad

Ingredients

For: Pico de Gallo

  • 4 roma tomatoes diced
  • 1/4 cup white onion diced
  • 1/4 cilantro chopped
  • 1/3 cup green onions diced
  • 2 tsps olive oil
  • 1/4 tsp garlic powder
  • 1/4 tsp dried oregano
  • 1/2 tsp dried parsley
  • 1/2 tsp red pepper flakes
  • 1 tbsp taco bell taco sauce or your favorite taco sauce

For: Salad

  • 1 8oz bag of shredded lettuce
  • 1/2 cup homemade pico de Gallo
  • 3/4 cup black beans canned
  • 2 tbsps dried cranberries
  • 2 tbsps wonton strips salad toppers
  • 1/3 cup BelGioioso mozzarella cheese pearls
  • 1 avocado diced
  • 1/2 serrano chili minced *omit if you do not like too much heat
  • sprinkle of salt, pepper, garlic powder & red pepper flakes

For: Dressing

  • 1 tbsp Ortega Flavor Craver Chipotle sauce
  • 1.5 tbsps Ortega Flavor Craver Taco Ranch sauce
  • 1.5 tbsps Newman’s Own BBQ sauce or any BBQ sauce
  • 1-2 tsps Cholula hot sauce or your favorite hot sauce

Instructions

For: Pico de Gallo

  1. Combine tomatoes, onion, cilantro and green onions in a medium bowl. Toss together. Add in olive oil, taco sauce and all spices. Making sure to mix well until all ingredients are incorporated. Refrigerate if not using right away.

For Salad:

  1. Combine lettuce, pico de Gallo, black beans, dried cranberries, wonton strips, mozzarella cheese pearls, avocado and serrano chili in a large mixing bowl. Sprinkle on salt, pepper, garlic powder and red pepper flakes. Pour in chipotle sauce, taco ranch sauce and bbq sauce. Mix well until all ingredients are incorporated. Top with your favorite hot sauce!
