So Hum – I am. I am that I am. The universe exists within me, as much as I exist in the universe.
Since January, I have tried to make meditation a part of my weekly routine. I may not get to it daily but several times through out my week, I make some time to simply breathe and release. Or as I like to call it: to stop and smell the roses.
Also part of my journey since January has been to eat more plant based foods. Foods that are simple, easy to make, nutritious but packed with flavor. Because, being Indian, flavor is a big one for me!
This masala street corn salad, is a take on Mexican street corn salad. The flavors in this corn salad remind me of grilled corn at bbqs when I was younger. Lemon juice, chaat masala and some red chili powder. Nom nom nom!
It makes a perfect side dish with a piece of grilled chicken, or as a salsa or relish! The possibilities are endless.
Masala Street Corn Salad
Ingredients
- 1 12 oz steam bag corn
- 15 grape tomatoes diced
- 1/4 cup red onions diced
- 2 green chilies diced
- 1 tbsp margarine or butter of choice vegan butter for a vegan recipe
- 1 tsp chaat masala
- 1/2 tsp indian black salt
- 1/2 tsp dhana jeera
- 1/2 tsp cumin
- 1/2 tsp indian red chili powder
- 1 tsp lemon juice
- 1/4 cup packed cilantro chopped
Instructions

Steam corn according to directions on bag.

Empty out steamed corn into a large mixing bowl. Add in grape tomatoes, red onions and green chilies. Mix to combine ingredients. Next, add in butter, while corn is still warm and stir together so butter melts and incorporates with the ingredients.

Next add in all the spices and mix well. Add in lemon juice and mix to combine.

Lastly, add in cilantro and mix together.
