Tropical Matcha Smoothie Bowl

 

Lately, I have been noticing all these swanky smoothie bowls floating around Pinterest. I spent hours clicking on smoothie bowl after smoothie bowl, and just drooling over the gorgeous pictures! At last, I decided, I was going to concoct a smoothie bowl of my own.

And so it began,

What better way to kick off  “new year, new me” than with some good ole leafy greens & matcha?!

 I started with frozen fruits, spinach, coconut milk (canned, that’s all i had on hand) and water. Blended on low speed, until the mixture was a thick soft serve consistency. Then I added in matcha powder, chia seeds, honey and mint leaves. And just like that, a smoothie bowl was born!

 

The trick here is to use frozen fruits!! I repeat, use frozen fruits! You will get that just right consistency. Top off your bowl with, some unsweetened dried coconut flakes, granola and chia seeds. I hope you enjoy this, as much as I did! I feel “healthy” already, just by staring at all that green. All that glitters is not gold, it is green! ha!

Tropical Matcha Smoothie Bowl

Tangy, Refreshing, Healthy, Matcha

Ingredients

  • 1 cup frozen mangos
  • 1 cup frozen pineapples
  • 1 cup spinach
  • 2/3 cup coconut milk canned
  • 1/3 cup water
  • 1/2 tsp matcha powder
  • 1 tsp chia seeds
  • 1/2 tbsp honey
  • 2-3 mint leaves
  • Toppings: granola coconut flakes, fresh bananas, chia seeds

Instructions

  1. Add frozen fruits, spinach, coconut milk and water to a blender and blend on low, until all ingredients are combined.
  2. Add in matcha powder, chia seeds, honey and mint leaves and blend on low. Mixture will have a slightly thick soft serve consistency. (If you desire a thinner consistency, add 1 tbsp at a time of coconut milk. Or add 1 tbsp of water at a time for a sorbet (ish) consistency. Keep adding until desired consistency is reached!)
  3. Pour into a bowl, and garnish with your choice of toppings. Try with granola, coconut flakes, fresh banana slices and chia seeds! Enjoy!
