“Heal, Learn, Grow, Love”
Those four words, resonated with me today, so I decided to start this post off with some motivation or maybe some reflection.
I must say, I have not had the urge to post something for all of May. In part due to being busy & on the go. I recently (well now a month in) made a big decision to quite my job! And since then it has been weddings & traveling. But now it is time to get back to the basics. I remembered why I started this blog in the first place. It keeps me in the moment and it brings me joy! Sharing, creating and concocting are some of my favorite things to do. So I decided to make some time for it today.
I will speak more on quitting my job & what that has been like in posts to come!
Back to the energy balls. You know when you have that sweet craving hit mid day. Where you are salivating for a sweet treat. Where the minute you see a cookie, you are going to devour it in one bite. Well – if you have a sweet tooth you know exactly what I am talking about! These energy balls are two fold: 1. A sweet treat that you should not feel guilty about 2. Energy! A great post work out snack or a pre work out snack to get you going. These work great even for a breakfast treat for those of you on the go.
I used sunflower seed butter as the protein in this snack, but feel free to switch it up with some peanut butter and even some protein powder!
No Bake Chocolate Chip Oat Energy Balls
A not so guilty post or pre work out treat!
Ingredients
- 1 ripe banana mashed
- 1 tsp cinnamon
- 2 tsps vanilla extract
- 1 1/2 cups old fashioned whole grain rolled oats
- 1 tbsp honey
- 1/4 cup chocolate chips
- 1/4 cup sunflower seed butter
Instructions

In a large bowl, mash together a ripe banana until it is soft and mushy. Mix in cinnamon and vanilla extract. Mix well.

Add in all other ingredients and mix together until a sticky dough like mixture forms. Don’t be afraid to use your hands to mix it all together!

Refrigerate for 30 minutes, allowing the mixture to firm up.

Roll into bite sized balls & enjoy!
Recipe Notes
- Refrigerate the balls for unto an hour or so, for the optimal taste.
- Can last in the fridge for up to week.
- You can substitute peanut butter in place of sunflower seed butter. However, the sunflower seed butter that I use from Trader Joe’s is somewhat sweetened. Just up the honey a bit if using peanut butter.
