Add frozen fruits, spinach, coconut milk and water to a blender and blend on low, until all ingredients are combined.
Add in matcha powder, chia seeds, honey and mint leaves and blend on low. Mixture will have a slightly thick soft serve consistency. (If you desire a thinner consistency, add 1 tbsp at a time of coconut milk. Or add 1 tbsp of water at a time for a sorbet (ish) consistency. Keep adding until desired consistency is reached!)
Pour into a bowl, and garnish with your choice of toppings. Try with granola, coconut flakes, fresh banana slices and chia seeds! Enjoy!
