No Bake Chocolate Chip Oat Energy Balls

A not so guilty post or pre work out treat!

Total Time 30 minutes
Servings 12 bite sized balls

Ingredients

  • 1 ripe banana mashed
  • 1 tsp cinnamon
  • 2 tsps vanilla extract
  • 1 1/2 cups old fashioned whole grain rolled oats
  • 1 tbsp honey
  • 1/4 cup chocolate chips
  • 1/4 cup sunflower seed butter

Instructions

  1. In a large bowl, mash together a ripe banana until it is soft and mushy. Mix in cinnamon and vanilla extract. Mix well.
  2. Add in all other ingredients and mix together until a sticky dough like mixture forms. Don’t be afraid to use your hands to mix it all together!
  3. Refrigerate for 30 minutes, allowing the mixture to firm up.
  4. Roll into bite sized balls & enjoy!

Recipe Notes

  • Refrigerate the balls for unto an hour or so, for the optimal taste.
  • Can last in the fridge for up to week.
  • You can substitute peanut butter in place of sunflower seed butter. However, the sunflower seed butter that I use from Trader Joe’s is somewhat sweetened. Just up the honey a bit if using peanut butter.
