Chia seed pudding is one of those things that I just couldn’t seem to enjoy the 1. consistency and 2. texture of. I couldn’t seem to find the right ratio of chia seeds to liquid. Well … I am pleased to announce I have found that ratio! And ever since then, I have created many different concoctions with flavors using the same basic measurements.
Here’s a tip for meal prep: take out 2-3 containers and just make it all ahead of time. This recipe makes a great prep ahead breakfast. And actually even a wonderful mid day snack / dessert.
Also, if you do not have roose syrup … feel free to omit or use agave in place.
Rose & Cardamom Chia Pudding
Ingredients
- 1/2 cup milk of choice I used hemp milk
- 2 tbsps chia seeds
- 1 tbsp rose syrup
- 1 tbsp rose water
- 1/2 tsp cardamom for a subtle flavor use 1/4 tsp
Instructions

Mix together chia seeds and milk. Set aside for 5 minutes. And then mix again to remove any clumps. Add in rose syrup, rose water and cardamom powder. Mix. Refrigerate for a couple hours / overnight. I prefer to refrigerate overnight, makes the consistency perfect!
