Somedays it be like that, right? Where anxiety takes over. Where it feels overwhelming. Where there is such an unknown, you have no idea what is next. It’s tough. I applaud all those who get through those tough days, those tough moments, those tough hours. I applaud you. Because it isn’t easy, living in this one big unknown we are all living in right now. Emotions are heavy. Feelings are heavy. We feel stuck. We feel helpless. And yet we manage.

Something I find comfort in is: quotes. To me when I read a quote that my soul resonates with, I feel as though I found someone out there that feels the same exact way I do and what is more comforting than feeling understood and validated?

Some food for thought today: Overwhelming anxiety can lead to overwhelming grace. What do you think?

Ohhhh …. and better yet, what about drizzling some melted chocolate on top and adding some crushed nuts. mMmmm … nothing screams summer more than this! And right now, we all need a little bit of sunshine and a summer treat.

Ataulfo Mango Lassi Pops

Ingredients

Ingredients:

For Pops:

  • 2 cups Ataulfo mangos cubed (roughly 2 mangos)
  • 1/3 cup non fat greek yogurt
  • 1 cup milk I used oat milk
  • 3 tbsps light sour cream
  • 1/4 tsp turmeric powder
  • 1/2 tsp cardamom powder
  • 1/4 tsp ginger powder
  • 1/4 cup agave depending on how sweet or sour your mangos are, adjust accordingly
  • 1 tsp chia seeds

For garnish:

  • 1/4 cup chocolate chunks semi sweet
  • Crushed nuts of choice

Instructions

  1. In a blender, blend together mangos, greek yogurt, milk and sour cream until smooth and creamy. Next add in turmeric, cardamom, ginger, agave and chia seeds. Blend together until all ingredients are incorporated.
  2. Pour into ice pop molds and freeze over night. Run under Luke warm water to remove from molds.
  3. Optional: Drizzle melted chocolate on top and add crushed nuts.
