Alright guys, this is one of my most popular and asked about recipes when it comes to the air fryer…and honestly it is one of the easiest recipes! Which is why it probably took me so long to post it. I figured everyone already knew about this! But …. no no no … it needed to be posted!

In times like this, I know we are missing some of our favorite fast food places. Taco Bell is one of mine! So it is only fitting to post this Mexican Pizza recipe.

What is a Mexican Pizza you ask? Well in simple terms: it is two tortillas crisped to perfection with a layer of beans and enchilada sauce in between them and some cheese and veggies on top…melted to perfection. I like to top the pizza with diced bell peppers, onions and tomatoes along with shredded Mexican cheese. Making it a fully loaded Mexican pizza. Also don’t forget to drizzle some Ortega Chipotle Sauce on top. It is..shall I say it again…perfection!

Air Fried Mexican Pizzas

Ingredients

  • 1 package Mission Super Soft Fajita Flour Tortillas
  • 1 can Refried beans or black beans cooked and seasoned to preference
  • 1 can Old El Paso Red Enchilada Sauce
  • 2 roma tomatoes diced
  • 1 red bell pepper diced
  • 1 yellow bell pepper diced
  • 1 red onion diced
  • 1/4 cup green onions chopped
  • sour cream

Optional

  • Ortega Chipotle Taco Sauce

Instructions

  1. Place two tortillas on a plate and press down lightly with a fork on the tortillas. This will create some holes on the tortilla, so it can crisp up in the air fryer. Lightly spray with an oil spray (both sides). Place tortillas in air fry pan. You can place up to four at a time, depending on the size of your air fryer toaster oven. Just make sure to separate them, so that they do not overlap. If you are using an air fryer basket, you will need to place one at a time and continue to monitor, as the tortillas tend to sucked up to the top.
  2. Air fry for 5 minutes on 350F, about 2.5 minutes on each side, flipping half way through. If you prefer a well done tortilla keep in for 6-7 minutes.
  3. Once tortillas have crisped, take out of air fryer pan and place onto a dish. Now you can start the assembly of the mexican pizza. On the first tortilla, place a spoonful of refried beans, spread so that it covers most of the tortilla. Next place a spoonful of enchilada sauce on top of the beans and spread across entire tortilla. Now place the second tortilla on top. Add a spoonful of diced tomatoes on top of the second tortilla. Next add a spoonful of enchilada sauce covering the tomatoes. Now you can add a spoonful of the diced bell peppers and onions. Lastly top with shredded mexican cheese, covering all the veggies. Sprinkle with some dried parsley, dried oregano, red pepper flakes, salt and pepper.
  4. You can place your assembled pizza back into the air fryer, until the cheese melts about 2-3 mins on 350F, or you can microwave it for 90 seconds. It is really about preference. The microwave will cause the pizza to soften a bit, but I prefer it that way. The air fryer will keep it crisp.
  5. Garnish with green onions and sour cream. I drizzled Ortega’s chipotle taco sauce on top.

Recipe Notes

  • I have found Mission Flour Tortillas to work the best with this recipe 
  • For the enchilada sauce, I like to add a 1/2 tsp of sugar, 1/2 tsp dried parsley, 1/2 tsp dried oregano, 1/2 chili powder and 1/4 tsp garlic powder to it
