Does it feel like there is this sense of underlying anxiety lately? Or is it just me? It’s just there each day. That anxious feeling. Those anxious thoughts. It’s rough times and I am sure everyone is feeling it. Sometimes, you just need to therapeutically get it all out.

Thanks to the internet and being more connected than ever before, I am seeing how people are therapeutically getting it all out. My news feed is flooded with pictures of banana breads, muffins, scones, freshly baked bread, brownies and then some. I am seeing people doing home work outs, people baking, people cooking, people offering their services for free virtually, meditation sessions, dance classes…it’s all really great to see and quite comforting.

Coping isn’t easy. But right now is the most important time to find ways to cope. During uncertain times, anxiety tends to be the highest.

And what am I doing to cope? Well, one of the ways I am coping is through cooking and baking. Another way I am coping is through lists. Lists give me a sense of structure through out my day, which right now is much needed for me. So with that I present to you Air Fried Goat Cheese Balls!

These are crispy on the outside and smooth and creamy on the inside. You can’t even tell these are air fried what so ever. Tip: try on top of a bed of spinach with a drizzle of balsamic.

Feel free to substitute whatever honey you have on hand. Most of these ingredients are pantry staples! You can also freeze these for up to a week. Enjoy!

Air Fried Goat Cheese Balls

Prep Time 10 minutes
Cook Time 10 minutes
Servings 9 balls

Ingredients

  • 1 tsp parsley dried
  • 1/2 tsp smoked paprika
  • 1 tbsp honey I used Mikes Hot Honey
  • cacked black pepper to taste
  • 1 8 oz goat cheese log
  • 1/2 cup panko bread crumbs
  • 1/3 cup all purpose flour
  • 1 egg beaten with a splash of water

Garnish:

  • dried parsley
  • extra honey to drizzle on top

Instructions

  1. In a large bowl, combine parsley, smoked paprika, honey and black pepper with goat cheese and mix together. Form into 9 medium sized balls.
  2. Separate flour and bread crumbs into two small plates. One plate with flour, one plate with bread crumbs. In a small bowl, beat the egg with a splash of water. So now you have a plate with flour, a plate with bread crumbs and a bowl with the beaten egg. Add a pinch of parsley, smoked paprika, salt and pepper to both flour and bread crumbs. Mix.

  3. Roll one ball at a time in flour, then dip in egg mixture, then roll in bread crumbs. If ball looses it's shape, re shape it after coating in bread crumbs. Repeat 8x. Place on a plate and freeze for up to 2 hours.

  4. When ready to air fry, spray goat cheese balls with an oil spray and then place into air fryer basket or tray if using the air fryer toaster oven. Air fry on 400°F for 10 minutes.

  5. Once done, drizzle honey and dried parsley on top and enjoy! Tip: Try on a bed of spinach for a goat cheese salad!

Recipe Notes

  • You can use any type of honey. I used Mikes Hot Honey for a kick of spice.
  • You can freeze the goat cheese balls for up to a week.
  • The longer you refrigerate the balls; the better the shape will hold up when air frying. You can also place in the freezer for 40 minutes, if you are short on time.
