When I came across the above quote, it really spoke to me. Like really, really spoke to me. How often do we ignore the things that spark a light in us, or talk ourselves out of things that make us feel alive, simply because we have other “obligations.” But do you ever notice the feeling you get when you do something that sparks a light in you? How time slows down, how you feel alive, how nothing else seems to matter in those moments? Whether it is spending time with your family, taking a walk, enjoying a hobby, reading a book …. whatever it is… I challenge you to do more of that! It is in those ordinary moments, you find joy. Keep that light alive!

Concocting recipes, blending together different flavors …. well that brings me joy! I had a vision of a chai spiced cannoli dip and that is exactly what I set out to create. Luckily for you and I, it worked out! This dip is oh soooo creamy and heavenly! Take the flavors of a traditional cannoli filling and fold in some: nutmeg, cinnamon, cardamom, cloves and ginger. It is just divine!

The best part of this dip, is the presentation.

You can get as creative as your heart desires with it! There are SOOO many ways you can present this for your guests. I personally like to make this dip for bridal showers, and lay out waffle cones. You can even fill up the cones with the dip (but do it right before the guests arrive, because the cones will get soggy). Another idea: break up waffle cones, and use it as “chips and dip.” And my absolute favorite: create a fruit and waffle cone platter with this dip.

Chai Spice Cannoli Dip

Finger licking, Creamy, Dreamy Delishness!

Ingredients

  • 1 8 oz mascarpone cheese
  • 1 15 oz ricotta cheese part skim, drained
  • 1 cup confectioners Sugar (Powdered Sugar)
  • 1 tsp vanilla extract
  • 3/4 tsp cinnamon
  • 3/4 tsp cardamom
  • 1/4 tsp nutmeg
  • 1/2 tsp ginger powder
  • 3 cloves

Serve with:

  • Waffle cones
  • Strawberries

Instructions

  1. Using a hand mixer, in a medium bowl, mix together mascarpone and ricotta cheese, until smooth. (~1-2 minutes). Slowly add the confectioners sugar – 1/4 cup at a time – and continue to mix until sugar is incorporated. Next add in vanilla extract, cinnamon, cardamom, nutmeg, ginger and cloves. Mix until all ingredients are incorporated. **Perform a taste test to see if you would like to add more sugar. I prefer a subtle sweet taste, so you may want to up the sugar a bit, depending on preference.**
  2. Cover bowl in plastic wrap and refrigerate for ~1-2 hours.
  3. Serve with broken up pieces of waffles cones and strawberries!

Recipe Notes

  • Be sure to drain the ricotta cheese, to get rid of any excess liquid. You can use a cheese cloth for this, or some sturdy paper napkins.
  • If mixture is runny, add in a bit more powdered sugar.
  • I have made this recipe with out using a hand held mixer, so if you do not have one, you can still make this! Hand held mixer makes the dip a bit more creamy, whereas with out it, it is a bit grainier.
  • The cloves are added in for aroma and flavor, but you can discard from dip once completed. You can also omit if you do not have.
