Pitaya Smoothie Popsicles

The rich magenta hue, the subtle sweetness of the dragonfruit and the slight tang of the pineapples paired together is perfection. If you don’t already know, pitaya is otherwise known as dragon fruit. Pitaya once was indigenous to Central & South America, but now is grown in other parts of the world. What does Pitaya taste like? It has a subtle sweetness to it, with the texture of a kiwi. Oh and it’s rich in magnesium, fiber, iron, antioxidants, B-12, Vitamin C, and high in iron and fiber!

I have found that Wegman’s, Shoprite, Wholefoods, Kings supermarkets are some of the pitaya plus retailers. If you haven’t yet tried dragonfruit, you are missing out!

And while these bowls are delicious, the calories quickly add up with all the toppings and it is also heavy on your wallet. When making your own smoothie/popsicles you can ensure you use the best ingredients and you get to save a little bit of $$.

This recipe also works as a smoothie. I normally use this recipe to make my morning smoothie, but for a fun treat I decided to pour into popsicle molds. Didn’t disappoint!

Pitaya (Dragonfruit) Smoothie Popsicles

Subtly sweet, non dairy, refreshing treat 

Servings 4 pops

Ingredients

  • 1 cup So Delicious Unsweetened Vanilla Coconut Milk not canned milk, if you prefer a sweeter taste get the sweetened variety
  • 1.5 cups Frozen pineapple chunks
  • 1 packet pitaya plus
  • 2 tbsps honey or more depending on preference

Instructions

  1. Blend all ingredients together and pour into popsicle molds. Freeze for at least 4 hours. If not making popsicles, consume as a smoothie! 

Recipe Notes

  • This recipe works as popsicles (4 pops) or as a smoothie for one person
  • I used So Delicious coconut milk, note this is not canned coconut milk
  • Smoothie / Pops have a subtle sweetness, to adjust the sweetness feel free to add extra sweetener and more pineapples as needed!
