Strawberry Cucumber Pineapple Smoothie

“Embrace the chaos”

I favor my home to be neat, organized and clutter free.  I fancy simplicity. I fancy minimal. This is especially true when it comes to food photography. I become fixated on capturing the ideal shot, where each object has to be in its place, the set up has to be flawless and nothing can be off.  However, there are certain areas of my life where I embrace chaos, so why not in the art of food photography? Isn’t there beauty in chaos?? I found myself admiring pictures that are not “neat” and “tidy” but have a certain element of messiness to them. So I decided to give that a shot, as I captured the essence of this smoothie.

I had set aside a jug of water with some cucumber slices and mint over the weekend. (Infused water for the win!) Towards the end of the week, I was getting ready to discard the cucumber slices when I thought to myself, ” HMM…why not try this in a smoothie?”

I even added some of the infused water!

Feel free to use as much or as little honey as you would like. Depending on the bag of frozen strawberries you buy, it can range anywhere from tart to sweet.

A perfect smoothie to enjoy the hot hot weather outside.

Strawberry Pineapple Cucumber Smoothie

Sweet, tangy, light and refreshing summer smoothie
Servings 1

Ingredients

  • 1 cup frozen pineapple chunks
  • 1 cup frozen strawberry slices
  • 7 cucumber slices
  • 1-2 tbsps honey depending on preference
  • 1/2 cup Silk unsweetened coconut milk
  • 2 tbsps water
  • 3-4 mint leaves

Instructions

  1. Blend all ingredients together, and enjoy! Adjust water depending on texture preferred and honey depending on sweetness preferred.
