Pumpkin Pie Seero

A festive medley of Diwali and fall in each bite

Ingredients

  • 1/2 cup ghee + 1 tbsp or as needed
  • 1/2 cup rava flour
  • 1.5 cups milk; I used 2%
  • 1/3 cup sugar
  • 2.5 tsps pumpkin pie spice blend can find at a supermarket, target etc
  • 1/4 tsp nutmeg
  • 1/2 tsp cardamom

Optional: if you want to serve the seero in baked apples

  • 4 small to medium apples
  • brush of ghee
  • sprinkle of cinnamon
  • sprinkle of pumpkin pie spice

Instructions

  1. In a large sauce pan, heat ghee on medium heat. ~30 seconds to a minute. Right until the ghee starts to simmer slightly.
  2. Add in rava flour and continue to stir constantly, incorporating the flour with the ghee.
  3. In a small pot, heat up milk on medium heat. Heat for about 5 mins or right until milk comes to a simmer.
  4. Keep stirring rava and ghee constantly for 7-10 minutes. The mixture should start to thicken and brown slightly. Once this happens, pour in the warm milk and add in the sugar.
  5. Continue to stir constantly. It will be a liquid texture first, then a cream of wheat texture and then slowly it will start to become thicker and thicker. ~3-5 minutes. *At this point you can add in any nuts if you prefer* *Depending on your rava flour, you may need to add in a little more ghee to get the mixture to stick together. start with +1tbsp and go from there.*

  6. Add in pumpkin pie spice, nutmeg and cardamom. Fold together to incorporate spices.
  7. Enjoy!

Optional:

  1. Preheat oven to 350F.

  2. Core out the middle of the apples, creating a hollow center. This will be your bowl for the seero.

  3. Lightly brush apples with ghee.

  4. Sprinkle cinnamon and pumpkin pie spices onto apples.

  5. Bake for 20 minutes or until slightly browned.

  6. Let apples cool for 10 minutes and then stuff with Seero. You can warm up the Seero slightly in the microwave first and then stuff inside the apples.

Recipe Notes

  • If you go the route of the optional step of using baked apples, I would suggest following the optional set of directions first. Meaning, pre heat the oven, core the apples and let them bake first. Then start to make the seero. 
  • If you prefer more ghee in your seero, feel free to add in more! I prefer just the right amount, but it is all up to preference.
