I have this mini waffle iron that I just adore. Truly. For one it’s a super cute decor item on my kitchen counter and it makes the best darn waffles! Perfect mini waffles each time. So how did I come to trying out a cracked egg in a waffle iron??

Well, you see I try and get in my weekly intake of eggs, you know for all the health benefits etc. However something about eggs just doesn’t sit well with me. No matter how many times I have tried scrambled eggs, hard boiled eggs, omelettes … I just can’t seem to stomach eggs. I recently started making egg salad, which with the added ingredient of mayonnaise I seemed to enjoy it! Well one morning I set out to make egg salad only to realize I didn’t have any more mayonnaise left. I saw my mini waffle maker staring back at me and I thought HMM….could I???

And boy could I! Where have waffle iron omelettes been?! Why didn’t I know about this before?!

This recipe is truly so easy, you don’t even need to add in anything. You can simply just crack the egg in the waffle iron and bam. But I like to add some taco seasoning, salsa and serve with a side of beans to give myself a little bit more protein and fiber.

Waffle Iron Omelette

Servings 1 person

Ingredients

  • 1 egg cracked and beaten
  • 1/2 tbsp salsa of choice
  • 1/2 tsp taco seasoning
  • 1/8 tsp garlic powder
  • 2 tbsps shredded mexican blend cheese
  • 1 tbsp chopped cilantro optional
  • 1 tbsp green onions optional
  • sea salt
  • black pepper

Instructions

  1. Mix in salsa, taco seasoning, garlic powder, cheese, cilantro, salt and pepper into beaten egg. Pour into mini waffle iron. Allow waffle iron to complete it’s timed cycle and then 1-2 minutes post it for a well done omelette. Note: I used a mini waffle iron, for a larger waffle iron add another egg and adjust spices accordingly.
  2. Enjoy with a side of black beans for some extra protein and fiber! And add some diced onions, tomatoes and green onions.
