I want to start off by saying, I apologize for the poor pictures showcased here in this post. You see – well I do not have a reason – but there are just some foods that do not photograph as well as they taste. AND this is one of them! I assure you these taste wayyyy better than the pictures may show! Buttery flaky paratha stuffed with a spicy tandoori paneer mix, this is comfort food!

Many of you asked me for this recipe for these via Instagram. I was initially going to do a post on my instagram stories for this recipe, however, I decided to stop being such a perfectionist and put up the darn pictures here! I mean – I will come back to this eventually and take new pictures lol.

As we all go a bit stir crazy at home, I thought this would be a good day to put up this recipe. Some of you may already have these ingredients at home and for those who do not, you can omit certain ingredients or get creative and substitute whatever you may like. I hope to have inspired some of you guys to get up and make something! Let’s all find ways to do things we enjoy, try new things or simply just get up and do something. It will help us to cope.

Air Fried Paneer Kathi Rolls

Prep Time 15 minutes
Cook Time 45 minutes

Ingredients

  • 2/3 cup Desi yogurt
  • 1 tbsp oil
  • 2 tbsps tandoori paste laxmi
  • 1/2 tsp dhana jeera
  • 1/2 tsp red chili powder
  • 1/2 tsp turmeric
  • 1/2 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp amchur powder
  • 1 tsp minced garlic
  • 1 tsp chaat masala
  • 2 tsps lemon juice
  • 1/2 tsp sugar
  • 1 12oz package of paneer diced into small squares or rectangles
  • 1/2 orange bell pepper diced
  • 1/2 yellow bell pepper diced
  • 1/4 cup diced red onions

For assembly:

  • 1 package Kawan Onion Parathas
  • Chings Red Chili Sauce
  • Trader Joe’s Zhoug Sauce

Instructions

  1. In a large mixing bowl combine together: yogurt, oil, tandoori paste, dhana jeeru, red chili powder, turmeric, cumin, garlic powder, amchur powder, minced garlic and chaat masala. Mix together to incorporate spices with the yogurt. Next add in lemon juice and sugar. Mix well. Slowly add in diced paneer and veggies and fold into the yogurt mixture.
  2. Set aside for 1-2 hours
  3. Once ready, take 1/3 of the mixture and place on air fryer pan. Be sure to line the air fryer pan with foil, as this will help the marinade to stick to the paneer and veggies. Air fry on 400°F for 12-15 minutes, depending on preference. Repeat 2x.

  4. To assemble:
  5. Cook parathas according to directions. For an extra flaky paratha I like to use a little bit of margarine to coat both sides before pan frying.

  6. Spread a spoonful of red chili garlic sauce and then a spoonful of zhoug sauce. Next place 2-3 spoonfuls of paneer mixture. Roll up like a burrito and cut in half. Enjoy!

Recipe Notes

  • Lining your air fryer tray or basket with foil will help the marinade to stick to the paneer and veggies.
  • You can use an air fryer toaster oven or an air fryer basket for this, the timings will be the same. You may need to place a little less at a time in the basket to ensure everything cooks thoroughly. 
  • I use Laxmi Tandoori Paste. However you can make your own tandoori paste at home with tandoori masala and some oil/water.
